FRIED MUSHROOMS

16 fresh porcini or shiitake mushrooms, stems removed, caps wiped well

1 cup all-purpose flour

6 to 7 tablespoons olive oil

Salt and freshly ground black, pepper

2 lemons, quartered

CUT the mushroom caps into 1/2 inch-thick slices. Place the flour in a medium bowl, add the mushroom slices, and toss to coat.

Heat the oil in a large skillet over medium high heat. Add the mushroom slices in two batches (to prevent crowding) and fry 3 to 5 minutes, until golden. Remove mushrooms with a slotted spoon, transfer to paper toweling, and sprinkle with salt and pepper to taste. Serve with lemon quarters on the side.
